FRIED GARLIC

Ingredients

2-3 heads of garlic, peeled

1 pt Canola or other neutral oil for frying

 

Finely mince peeled garlic, doing your best to make sure all of the pieces are relatively the same size. You can use a food processor, but it may require additional chopping to make sure everything is even. 

Heat the oil in a sauce pan over medium heat, adding the garlic right before it starts to simmer. Once simmering, whisk frequently to keep the garlic from sticking together. Just as the garlic stars to change color, turn the heat off and keep whisking in the hot oil until the garlic reaches golden brown. 

Strain the oil into a heat safe container and lay the garlic out on a plate or tray lined with paper towels to dry. Store in an airtight container on the counter.
